Cacao Hazelnut Gems



A delectable dessert packed into a tiny morsel. Truly the dream. These gems celebrate the flavours of a childhood classic in a new way. They are a cinch to whip up with only four core ingredients and taste like a Ferrero Rocher. Plus, they are made with nutrient-rich whole foods that will leave you satisfied and energized. It’s kind of unbelievable how delicious these are - I shocked myself the first time I made them. Just to be sure, I made them again. They are that good.


The key to these having a rich, chocolate flavour is using a cocoa-like cacao powder (cocoa works as well). Many raw cacao powders don’t taste anything like chocolate, but this variety has a very chocolate-y flavour which really intensifies their richness and depth.


I like to make a batch of these to have on hand for a quick bite in between activities or to savour after supper (or to eat for a snack, lunch or even breakfast!) Whenever I make little gems like this for home, I like to roll them into various sizes so that I can choose one (or five) based on what my body feels like - little ones for a quick taste and bigger ones for more substantial snacking!






CACAO HAZELNUT GEMS

Makes many


 

10 pitted Medjool dates

1 1/4 cup hazelnuts, used separately

3 heaping Tbs cacao powder

2 heaping Tbs coconut oil

1 tsp vanilla extract

1/2 tsp sea salt


 

  1. Pulse 1/4 cup hazelnuts in food processor on high until finely ground. Set aside.

  2. Pulse dates, remaining hazelnuts and cacao powder in food processor until finely ground.

  3. Add coconut oil, vanilla and salt and process until a dough begins to form.

  4. Roll into balls, press in crushed hazelnuts and place in an airtight container in the fridge. Store them in the fridge for up to 3 weeks and in the freezer for 3 months.
